Apple Raisin Oat Cookies

Ingredients
2 sweet apples
¼ cup of raisins
1 cup gluten free oat flour
½ cup gluten free quick oats
¼ cup old fashioned rolled oats
1 tsp of cinnamon powder
½ tsp of nutmeg powder
¼ tsp of allspice
1 pinch of salt
½ tsp baking powder
¼ tsp of baking soda
1 egg at room temperature
¼ cup of raw cane sugar or coconut sugar
3 tbsp of oil
Method
Step 1

To prepare the applesauce, peel and deseed two sweet apples. Roughly chop and cook on low to medium heat adding 1 to 2 tablespoons of water only if apples start sticking to the bottom of the pot. When soft, blend to a puree and set aside to cool down.

Step 2

Soak the raisins in warm water for 10 minutes, then drain and set aside.

Step 3

Mix the flour, quick oats, old fashioned rolled oats, salt and spices, baking powder and baking soda. Set aside.

Step 4

In another bowl, whisk the egg, sugar, oil and applesauce.

Step 5

Add the dry ingredients to wet ingredients a little at a time, mixing well until incorporated.

Step 6

Fold in drained raisins.

Step 7

Divide dough equally using an ice cream scooper. Place on a baking pan covered with baking paper. Flatten.

Step 8

Bake in a preheated oven at 170°C for 20 minutes.

Step 9

Let the cookies cool completely before storing in an airtight container.
